This dish was inspired when we got together with some friends and I tried a broccoli salad one of them made. I didn’t get the recipe, but this is my best copycat version! The creaminess from the garlic mayo is divine.

Recipe: Bacon-Broccoli Salad

1/2 pound cooked bacon pieces

5 cups chopped broccoli

3/4 cup homemade garlic mayo

1 TBSP balsamic vinegar

2 TBSP honey

1/2 cup minced red onion

1/2 tsp salt

Put chopped broccoli, onion and bacon pieces in a large bowl. In a separate bowl, mix together the mayo, balsamic vinegar, salt and honey. Stir into broccoli mixture and continue to stir until well-combined. Eat promptly or store in the fridge for later. It tastes great the next day!

Salmon Salad

I’m not a huge fan of tuna salad, so this is a nice change. It’s a quick, simple lunch that’s packed full of protein and Omega 3′s!

Recipe: Salmon Salad

2 cans salmon, drained

2 boiled eggs

1/4 cup chopped onion

4-5 TBSP homemade garlic mayo

1/4 cup chopped celery

1/4 cup chopped bell pepper

splash of lemon juice

pinch cayenne

salt and pepper to taste

This is the salmon I found at Costco, and its only ingredients are Wild Alaskan Salmon and salt:

Combine all ingredients in a bowl and mash together with a fork. Eat alone or over a bed of greens. That’s it!
