Recipe: Perfect Chocolate-Almond Butter Bites (makes 12-14)

Perfect Chocolate Almond Butter Bites

1/2 cup almond butter

2 TBSP coconut cream concentrate

2 TBSP pure maple syrup

1 bag dairy-free, soy-free chocolate chips

Melt the chocolate chips in a double boiler. Meanwhile, stir together the remaining ingredients in a small bowl. When the chocolate is melted, use a small cookie scoop or spoon to fill mini-muffin cups halfway. Add a drop of the almond butter mixture to each muffin cup. Top with remaining chocolate, making sure the almond butter is covered. Place in fridge to cool until hardened. Bite in and enjoy!

Sounds YUMMY! Is there a clean substitute for the Coconut Cream Concentrate? Hubs is allergic to coconut. Thanks.

Hi, Mary! You can leave the coconut cream concentrate out–it won’t be as creamy, but they still taste great!

These were my favorite before we went to real food (I guess, Reese’s that is). I am so excited to see a real version of my favorite treat. I can’t wait to try these!

HOw awesome! We just made something similar to these the other day: homemade peanut butter cups!! I also made peanut butter cups filled with cranberries, pumpkin seeds, chocolate chips and coconut flakes. Unfortunately they were gone within days!!

I’m just curious how many this makes? They look delicious, want to make them for our Super Bowl feast tomorrow.

Hi, Lorraine. It made about 12-14, I think. I’m so sorry I forgot to write that down!
