Chocolate Cake For Two

I absolutely love chocolate. So coming up this recipe without tasting it was, well, quite difficult. Being on the Whole30 keeps me out of that game for now. I did, however, get the “thumbs up” from 4 kids (one is gone with Nana and Papa) who have no problem in telling me if something doesn’t taste good. I decided to make a smaller recipe this time for those of you out there who may not have a zoo (a.k.a. house)-full of mouths to feed. Or, maybe you have a sweetie pie you’d like to make a special treat for. Put the kids to bed, light a few candles, and enjoy this decadent dessert like you’re dating again! I can tell you, it smells delicious!

Recipe: Chocolate Cake For Two

1 egg + 1 yolk, beaten

2 TBSP coconut oil, melted + a teaspoon or so to grease ramekins.

3 TBSP honey

1/2 tsp vanilla

1/3 cup almond flour

2 TBSP unsweetened cocoa powder

Preheat oven to 350 degrees. Grease two ramekins with coconut oil. Whisk together wet ingredients in a small bowl. Add almond flour and cocoa powder and stir to combine. Pour equal amounts into each ramekin and bake for 17-19 minutes, until toothpick inserted just brings out a teensy bit of the batter. You don’t want to overcook–it’s better a bit underdone.

    Is the coco you use unsweetened? It seems as though it would be since you add honey..just clarifying.
