Broccoli Frittata
Recipe: Broccoli Frittata

1 lb ground sausage (or any type of meat you’d like. If you’re doing the Whole30, make sure you carefully check the ingredients!)
1/2 bell pepper
1.5 to 2 cups broccoli
1/4 cup sliced olives
7 eggs, beaten
1-2 cloves minced garlic
1/2 tsp salt
Preheat oven to 350 degrees. In a cast iron skillet, brown the sausage. While that’s cooking, in a food processor, pulse the broccoli, garlic and bell pepper together until chopped small:

Once the sausage is browned, add broccoli, bell pepper and salt and stir until combined. Add eggs and let cook for about 5 minutes on medium-low heat until it begins to set. Note: DO NOT STIR! Sprinkle olives on top. Remove from stove and place in heated oven for about 10-12 minutes, until completely set. Remove and enjoy!

July 2, 2012Made this today. Swapped out sausage for bacon, and broccoli for chard, cabbage, and scallions (to use my CSA share). All I can say is “Holy yum!!” Thanks for another great recipe. Hope you had a happy birthday!
