These are a great high-protein sweet snack. They are amazing when cold, too! I stick mine in the fridge and then nibble off it throughout the day. I know…bad. If you need a post-workout pick-me-up, these would fit the bill!
1.5 cups almond flour
3 cups dates (I use the Deglet Noor ones from Costco, but you can use whatever you can get your hands on–just make sure they’re pitted! Just know that the drier the dates are, the drier the finished result will be. Medjool are the best for this recipe!)
2 cups unsweetened coconut flakes
1/4 cup unsweetened cocoa powder
1 tsp pure vanilla (Note: I tried this recipe with the pure vanilla from Costco and Cook’s Cookie Vanilla Extract, and I *highly* recommend the Cook’s brand. It makes a huge difference in the taste.)
1/4 cup melted coconut oil
2 TBSP water or coffee (I like them with coffee, but if you don’t like coffee, water worked great too)
Combine all ingredients in a food processor and pulse about 15-20 times. Then run for about 20 seconds. Check consistency and make sure it’s pretty smooth. Pour into a glass dish (I used an 11×7 dish, but you could do 11×13 or a smaller one for thicker bites). Press down firmly with a spatula or fingers until nice and flat. Cut into bite-size pieces and enjoy! Store these in the fridge for the best taste!
