Raw Choconut Bites

These are a great high-protein sweet snack. They are amazing when cold, too! I stick mine in the fridge and then nibble off it throughout the day. I know…bad. If you need a post-workout pick-me-up, these would fit the bill!

Recipe: Raw Choconut Bites

1.5 cups almond flour

3 cups dates (I use the Deglet Noor ones from Costco, but you can use whatever you can get your hands on–just make sure they’re pitted! Just know that the drier the dates are, the drier the finished result will be. Medjool are the best for this recipe!)

2 cups unsweetened coconut flakes

1/4 cup unsweetened cocoa powder

1 tsp pure vanilla (Note: I tried this recipe with the pure vanilla from Costco and Cook’s Cookie Vanilla Extract, and I *highly* recommend the Cook’s brand. It makes a huge difference in the taste.)

1/4 cup melted coconut oil

2 TBSP water or coffee (I like them with coffee, but if you don’t like coffee, water worked great too)

Combine all ingredients in a food processor and pulse about 15-20 times. Then run for about 20 seconds. Check consistency and make sure it’s pretty smooth. Pour into a glass dish (I used an 11×7 dish, but you could do 11×13 or a smaller one for thicker bites). Press down firmly with a spatula or fingers until nice and flat. Cut into bite-size pieces and enjoy! Store these in the fridge for the best taste!

    These were truly amazing!!! I can’t wait to try them! Where can we buy almond flour? Is it just almonds that are completely pulverized? Can we make it at home with a VitaMix or a food processor?

      I buy my almond flour in bulk at nutsonline.com. You can buy it at regular grocery stores, but it’s really pricey. It is made from blanched (skins removed) almonds that are ground into flour. You can make your own, too. You can Google making your own almond flour to see how to do it!

    We made these today- doubled the raw cocoa and topped with sesame seeds and flax seeds. Very very good- even my 11 yr olf loves it. Thanks for the recipe!

    I made these last night and they were good but very crumbly. Did not keep shape. Any suggestions?

      I’m thinking more coconut oil? The moisture content in dates can very quite a bit, so if you had pretty dry dates you may need to add a bit more coconut oil. It’s the oil that helps hold them together…hope that helps!

    yeah, my dates were a little dry. I used the Delgate Noor b/c I had on hand but I really prefer to use the Medjool when making stuff like this. They seem softer. Thanks for the oil suggestion!
